Two Recipes in one post.. What?

Hello Again :) So apparently Jon read my last blog and REALLLY liked the Beer and Bacon pancakes, ever since I posted about making the pancakes, he has been hounding me about when I'm making them. I wanted to make them on Saturday but we were at his parents house, so I decided to make them on Sunday since he wouldn't have class and for once would be home in the morning.  After we got home from his parents on Saturday we went to the store and got everything we needed, somehow we forgot the eggs so Jon picked some up before he got home on Sunday (thank you Jon)  This was a excellent recipe to make because it called for separating the egg yolks and egg whites,  Something I don't have much experience with.  It turned out pretty good, no egg separating horror stories.  The recipe said this would make the pancakes fluffier, and they definitely were fluffy.  The electric mixer that I got from my grandmothers apartment came in handy. This recipe was a little strange it called for a whole bottle of beer, How will that taste good.. in a pancake??

I think this is the earliest in the morning I have started cooking,  I started right after Jon got home, at 8ish.  I was hoping I wouldn't be too tired and mess it all up.  It was good to make it all from scratch instead of buying pancake mix, and there aren't that many ingredients.  

10 slices bacon, cooked until crisp and diced ( we actually didn't use bacon ) 
1 3/4 cup flour
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 egg, whites and yolk separated
1 12 oz. bottle nice beer (I recommend something like Newcastle or a nice amber beer – this is definitely not a recipe you can use a cheap beer with because you can taste the beer)
1 1/2 tablespoons vegetable or canola oil
syrup, for serving

We used Fireman's # 4 beer, next time we make it I want to use Blue Moon. 
  


I decided to whip up some whipped cream to top my pancakes with since I had left over cream from my Cajun pasta.  looks professional right? 


The outcome :    I thought the pancakes were really delicious, they didn't exactly feel like pancakes,that was probably the fluffy-ness. I took a picture of my plate since Jon already started devouring his plate of pancakes.  I thought the pancakes had an interesting flavor, the beer and syrup almost made them taste like vanilla.  Jon hasn't entirely said whether he liked the pancakes or not, he said they had an odd taste.  
The pancakes were really fun to make and I'm going to make pancakes like this instead of buying the mix.
I give them a B +
I want to make a bunch of different kinda of pancakes.  
Next pancake I want to make is Banana pancakes.  They sound yummy,  and of-course because Jack Johnson's song is one of my favorite songs.  

Last week we went out to dinner at Chili's, I had no idea what to order since I'm trying to eat healthy but still  I don't want to give up all the flavor.    I decided on the Cajun pasta, yeah it wasn't too healthy but you can splurge once in a while right?  I thought the cream sauce was just too rich and was probably the main source of the "unhealthy"problem.  When we got home from Chili's I logged on to Pinterest and found many different lighter versions of Cajun pasta.   We agreed to try one the following day.  I couldn't figure out which recipe to try so I tweaked one recipe.  this one  It seemed to be the simplest one , I added green  peppers to it, and we used Penzey's Cajun seasoning.  ( Thanks mom for the seasonings kit from Penzey's) 
Every time I added another ingredient to the pan it smelled even better.  I love the smell of garlic and peppers.  When it was all mixed together and peppers and tomatoes were cooked down a little, we added the pasta into the pan.  I was really excited to try it, it smelled amazing.  After we got it on to our plates Jon and  I took the first bites at the same time.  The Cajun Pasta had an impressive flavor, it wasn't too spicy but you could taste just enough spice.  The recipe calls for 2 tsp of Cajun seasoning, I added one shake more and funny enough Jon added a little bit more too. So I guess add as much or as little as you like.  

This might have to be our "go to" recipe, it is exceptionally easy and Jon even said it was good enough to add to our recipe organizer book.  Also he took the leftovers to work.  It really must be good if he can eat it at 4 o'clock in the morning.  Hope it kept him awake.  ;)  



 Jon's mother got me the Girl Scout Cookies I needed to make the Thin Mint Truffles, so I'll be making that next.  Wish I was still a Girl Scout, everything's better with Girl Scout cookies.
