Putting the Cookbook to work..
A lot of things have happened recently.. I've been busy trying to find a job and wondering if anyone will ever call me back after I have an interview.. ugh. I mean who wouldn't want to hire me... I'm awesome!
So I've been seeing this commercial on TV about the French's Crunchy Onion Chicken and I think it might be about time to try it.. It looks like its a good recipe for a busy mom with kids.. but I figured I would make it because Jon is sort of like a kid.
But.. then again I might not make the chicken tonight ..I think Chicken Soup is on the menu for tonight.. I think I may have come down with either a cold or a bad case of allergies.

Recently I bought some bananas to have with cereal but I didn't finish all of them and they were getting pretty darn ripe on the counter so I decided I would bake with them before Jon would yell at me for leaving moldy bananas on the counter.. (psst. he wouldn't really do that)
Instead of making just banana bread I decided to make the Banana Bread Brownies from my Fat Witch Brownie Book. They look so mouthwateringly good. mmm!
They were REALLY fun to make.. only thing I was slightly worried about was melting the chocolate, but since you melt it with butter it turned out fine.. wheww.

Only thing that isn't always fun about cooking/baking is that you have to wash dishes because more then likely you will make a mess. I wish there was a way to cook without getting dishes dirty.. if only.

The finished product is sooo much better then just regular Banana Bread.. So glad I made them. I think Jon still isn't sure about them.. He wouldn't tell me what he thought about them... but guys never do..
My mom just reminded me that I forgot the recipe.. ooops.
so here it is
Banana Bread Brownies
6 tablespoons (3/4 stick) butter
3/4 cup chocolate chips
1 teaspoon vanilla extract
1 3/4 very ripe bananas (about 3-4 bananas)
1/2 cup sugar
3 large eggs, slightly beaten
1 3/4 cups flour
1/2 teaspoon salt
Grease a 9X9 inch baking pan with butter. Dust with flour and tap out the excess. Preheat the oven to 350 degrees
Melt the butter and chocolate in a small saucepan over low heat, stirring frequently. Remove from heat and set aside to cool.
In another bowl, mix the vanilla and sugar into the mashed bananas with a fork. Add the beaten eggs and continue mixing until everything is well mixed.
Measure the flour and salt and sift together directly into the banana batter and mix until well combined
Using a spatula, fold in two thirds of the cooled chocolate mixture until it is incorporated.
Spread the batter evenly in the prepared baking pan and drizzle the remainder of the chocolate mixture on the top.
Move the spatula in and through the batter to create swirls.
Bake for 35 minutes or until a toothpick comes out clean
remove from oven and let cool
Makes 12 to 16 brownies
