Gettin' excited about thanksgiving..
Long time no post..
Sorry everyone I have been SUPER busy.. Now that Jon and I both have jobs we barely have enough time to get stuff done.. Work has been really busy, I love my classroom though.. and the kids..We had a thanksgiving celebration on the 14th and it was really fun. The turkey was really yummy.
This thanksgiving Jon and I are going to cook, we are going to go to his parents and use their crockpot to make the turkey.. I think his mother has more kitchen utensils then we do ;)
On thanksgiving morning I am going to make Pumpkin Pie Almonds.. It seems like a good munchie snack, and I'm pretty sure It will keep the thanksgiving stress down..
Pumpkin Pie Almonds
Ingredients:
2 cups of raw almonds
3 teaspoons of ground cinnamon
2 1/2 teaspoons of pumpkin pie spice
4 tablespoons of honey
1 teaspoon of vanilla extract
sea salt
Directions: preheat the oven to 325 degrees. Line a cookie sheet with parchment paper or foil
Place your almonds in a bowl. Then add cinnamon, pumpkin pie spice, honey and vanilla. Toss to coat each nut. Spread the nuts evenly on the cookie sheet. Sprinkle with sea salt. Bake for 18-20 minutes. Let cool and serve and let everyone taste the yumminess.

Also I wanted to let everyone know of a wondrous recipe. I saw a recipe on Pinterest and I knew I had to try it. I wasnt sure If Jon would eat it.. but you make pasta for the boy and he eats it.. So I tried Lemon Garlic Spaghetti. Jon liked it because it was pasta but was a little unsure of the sauce since it was really just cheese, lemon, oil and pine nuts and basil. I thought it was delicious.
Lemon Garlic Spaghetti
4 oz dry spaghetti
1/4 grated Parmesan cheese
2 tsp olive oil
1 garlic clove
1/2 lemon
2 tbsp pine nuts
5-6 basil eaves
First start your garlic oil. Pour in olive oil and chopped up garlic into a small frying pan and let it cook over low, until the garlic starts to brown on edges. Immediately remove from heat and reserve. While thats starting up, boil some spaghetti.
Chiffonade some basil leaves. then take some cheese.. some pine nuts and ...
dump it in a large bowl, with the garlic oil, garlic chucks and all. Squeeze in lemon juice. Throw in the spaghetti and toss until well combined. Plate and crack some pepper. yummy!

I am excited about Thanksgiving. Glad to hear you are cooking. Tommy and I will not be cooking, we are going to his parent's house. Yum, Yum, and Gobble, Gobble.
