Changes in the air.
You ever have one of those times where you dont have time to relax? Every day you just do the same thing over... and then the next day repeat. ughhh I think I'm in a rut. I havent even been able to update.
One of the things I have learned about myself is every few months or so I get restless and want to do something different and exciting.. I've been working at Kids R Kids for a while but Its time to move on to bigger and better things and to start studying Occupational Therapy. I need to do this for me. Doing this will also give me a chance to visit my parents in New York and spend some time with my mom who is recovering from having a stroke last year. I miss her. I hope I can also see some of my friends.
The other night Jon and I made Taco soup in the crockpot. It was amazing..
Its a really easy recipe, we got it from his mother.
all you need are
1 lb ground beef or turkey
1 can of pinto beans
1 can of black beans
1 can rotel tomatoes
1 packet Ranch dressing mix
1 packet taco seasoning
1 can corn
5 cups water
and whatever else you want to garnish with :)
All you need to do is Cook and drain the beef. Drain and rinse the beans. Mix the beef, beans, tomatoes, corn, ranch, taco seasoning and water in the crockpot. cook on low for 8-9 hours and enjoy the delicious soup.
It is perfect on a cold or rainy day.
