Ouch.. I did a really awesome cross fit video a few times yesterday and Im feeling the burn today, but I dont really mind it .. It hurts so good.

The last few days I have made really delicious dinners, I made really amazing salmon and the next day I made Maple Dijon Chicken with Roasted Squash. The roasted veggies were the best, Jonny had Quinoa instead.. he wasn't feeling the roasted veggies .. too bad.. more for me
I was talking to one of my friends on Skype and this made me smile.

I can't wait to see her when I'm in Schenectady in May. My friend is getting married on the 18th and I am going to be in New York for two weeks before the wedding to see my parents and catch up with people. I cant wait. I miss all of you.
This recipe is amazing, everyone should make it even if you don't like squash ... just try it. Your mother will be happy you are eating your veggies.
Roasted Summer Squash and Zucchini
Ingredients
4 large zucchini
2 large yellow squash
2 teaspoons garlic powder
1/2 teaspoon pepper
olive oil
1/8 cup Parmesan cheese
Directions
1. preheat oven to 350
2. Chop your squash into large chunky slices about 1/2 to 3/4 thickness (hah)
3. Spray cookies sheet with olive oil
4. Line up your little squash slices
5. Spray olive oil over them
6. Sprinkle your spices over the squash
7. Bake for 30-45 minutes
8. Let cool a little and serve
I had some over Quinoa the next day and It was a perfect lunch. yum-o. (Im totally not rachel ray )
So something really nifty happened on Easter, Jonathan's parents next door neighbor heard that we have a card table for our table so she offered to give us her table.. WHATTT? Definitely a step up from a card table .. We finally got the table last night and I think I love it already. Its so adorbs, I eventually want to reupholster the chairs. That will be a project :)
I baked chocolate chip cookies to say thank you for the table and they might be my best chocolate chip
cookies to date.. Probably because I used a little bit too much vanilla ( I love vanilla)
