two recipes in one.
Its been a busy week and I haven't really had time to blog... Crazy I know.. but Last week I made Strawberry Muffins and Spinach triangles..
Both are my moms favorite recipes.. One of my best moments as a child was making Spinach triangles before a party. You had to get some early or they would all be gone.. Another one of my favorites was when my mom made Strawberry Muffins while we were on Vacation in Cape Cod or Cape May. They always smelled so amazing while they were baking. One of my favorite smells also..
I also love the smell of anything Vanilla.. mmmm
This first recipe is the recipe for Spinach triangles.. Its pretty easy once you get the hang of it ..
Spinach Triangles Or Spanakopita
2 packages frozen chopped spinach, thawed and squeezed
5 eggs
1 onion,chopped
1 tbsp Dill
Saute the onion in a little olive oil. Cool a little and add to the other ingredients. Mix together everything.
Using extra virgin olive oil, make triangle with thawed sheets of filo dough. Spread each sheet with oil( fold sheets into thirds, scoop about 1 tablespoon mixture on top, then fold as you would a flag)
Freeze some of them, and bake the rest at 350 for about 12 minutes.

So one of My friends had a deal on a free local goodies box from Greenling. I used it and a got a huge box of beet greens, potatoes, mint,kale and a grapefruit. Its amazing.. If you know me you know I geek out over fresh fruit and veggies.. Cool Beans
