A tale of a Dinner party and everything else..

Last week Jon and I decided to have a dinner party ( Well I guess I decided it ) We had a really fun New Years eve hanging out with Jon's friend Tres, and his girlfriend Brooke..  ( they are awesome ) So Brooke and I decided that they would come over for dinner.. 

We picked the menu

Mexican Chicken 

Peanut Butter Cookies 

Cresent Roll Cheesecake 

( and she made cookies too )

I was running around that day baking everything and cleaning up the apartment ( and of-course listening to my jams while cooking ) 

They came over at 6:30ish and the boys went into the computer room and made some leeway on planning the bachelor party.. oh boy .. and Brooke and I talked and chatted and played with this little guy ..

Im not sure what it is but every time I see a baby they always stare at me..Could be because I smile at them and try to make them laugh :) oooh babies! ohhh and while I was holding him he spit up all over my arm.. ah.. gotta love babies ;) 

Anywho.. So dinner was actually really good. The mexican chicken was really good in tortillas. I want to make it again and actually made enchiladas.  Everyone said it was excellent ..

The recipe for the Mexican chicken only had oven directions, I wanted to make it in the crockpot so I baked the chicken for 15 mins until it was done and then I cut the chicken and put it in the crockpot with enchilada sauce and cheese and some rice and let it melt together for 2 hours ( or however long it needs) It was super cheesy

After we got to chill with the baby for a while we had dessert. Of course the boys had some cookies before dinner but thats okay.  ( they were delicious) The reason I wanted to make the cresent roll cheesecake is because when I made it for Jon's friend Chris.. his face was priceless.. It was that good.  So test subject 2 .. Tres.. He put the fork to his mouth and tried a bite... and this was his face...

Yes.. it is Jizz in your pants worthy .. and um.. yeah.. I kinda love Andy Samberg. Hes pretty awesome.

 So lets talk about Peanut butter cookies.. I really wanted to make some since I had such success with the best sugar cookie recipe ever.. so I decieded to branch out a try a peanut butter cookie recipe with only a cup of peanut butter and 1 egg .. 

.. They looked completely fine going in to the oven.. 

Taking them out of the oven was a completely different story.. They flattened completely to the cookie sheet and the second batch burned ..like really burned... I never burn cookies..

Well I did learn one thing.. If you really mess up and the cookies are burned to the cookie sheet.. just run the cookie sheet under really hot water and the cookies will eventually crumble off.. what fun.. 

Well I guess thats just how the cookie crumbles? ( hah.. see what I did there ?)

I am really glad that I met Brooke, she is a pretty amazing person and is really fun.. heres to more fun times with her.. I'm sure we will be together more if the boys end up hanging out more : ) 

I've been doing t25 for a while now and It really makes me feel stronger and much better about myself. Its almost done with and I have to figure out what to do next... hmmm.. P90x3?
