Practice makes perfect .. or not ha :)

Last week I wanted to make a new breakfast recipe on Saturday... Enter the lovely Internet .. I found a recipe for Mexican Chorizo hash.. It was my first time cooking Chorizo and It turned out to be REALLY good.   I made a lot of recipes this week.. 
  • After I finished the 21 day fix, Fiance and I got a box of Girl Scout cookies so I made Thin Mint Truffles, then I made Almond Crusted pork loin for 8 people. :) I'd say I got some good results, 
  • Mexican Chorizo hash
  • Ingredients 
  • 2 ounces raw Mexican chorizo
  • 1 cup pre chopped onion
  • 1/4 cup coarsely chopped bottled roasted red bell peppers
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • (6-ounce) package baby spinach
  • 2 teaspoons olive oil
  • 2 1/2 cups refrigerated shredded hash brown potatoes (such as Simply Potatoes)
  • large eggs

Preparation

  1. 1. Heat a large skillet over medium-high heat. Add chorizo to pan; cook 3 minutes or until browned, stirring to crumble. Add onion, bell peppers, salt, and black pepper; cook 3 minutes, stirring occasionally. Add spinach; stir until spinach wilts. Remove sausage mixture from pan. Add oil to pan; swirl to coat. Add potatoes; cook 8 minutes or until bottom is crisp. Stir in sausage mixture. Make 4 egg-size spaces in pan with a spoon. Crack 1 egg into each space. Cover and cook 4 minutes or until egg yolks are slightly set.



So Jonathan's sister was coming to Houston to visit for a little, she was bringing her adorable son :) 
So we got to hang out with an almost 3 year old.  We went to the rodeo and had a lot of fun.  
I love being around kids, and now he can say Aunt Rachel so I am no longer "Aunt Pickle".  whew.  
On Saturday Jonathan's parents had their friends over and his mother didn't know what to make for dinner so I decided to make dinner.. I ended up making the Almond Crusted Pork loin with Red Wine Raisins.  We got a huge pork loin this time, and I think we could have gotten a bigger one.. there were only a few pieces left over.  Everyone loved it :) 

Preparing
Jonathan's sister convinced us to sign up for a 5k with her, On Sunday we did the 5k .    I had been training for it .. running slightly longer but I still hadn't got up to a 5k. ( I really should have trained more but I didn't want my ankle to act up) One of my bucket list items before my 26th birthday was to finish a 5k.  and finish we did.. After basically a cluster**** of a start.. It was supposed to start before the parade but it took them ENTIRELY too long to close off the street.. so we started two seconds before the parade.. way to go.. Jon and I started off running too fast I think so we kinda screwed that up.. My foot was really hurting so I had to walk for some of it.. The best part of it was getting beads to run with and slapping the kids hands that were standing by the road.  :) The most awkward part was .. basically being in front of the parade or they guy who shouted " you guys didn't win".. well duh. I didn't want to win it.  
But I accomplished something.. and for that I am proud.  

After the 5k

My legs were so sore and still are a little bit sore.. but I took a bath with Dr Teals Epsom salt soaking solution and I feel much better :) 

I will feel even better if we go out and buy Frozen today * hint hint Jon* ;)
