Happy Monday..
Every Monday I always try to wake up with a positive attitude and attempt to get psyched for the week :) Most weeks it works pretty well.. Sometimes In life there are things that go wrong or just don't work out.. I think the best way to deal with things like that is to just keep smiling and keep thinking tomorrow is a new day. I had a busy morning running errands and getting groceries but I had just enough time to bake sugar cookies in the afternoon.. whew.
So I bake the cookies then realize that over the weekend when we got butter, Jon accidentally picked up the wrong butter.. ( Sea Salt and Olive oil..) It would be wonderful by itself but .. not in sugar cookies.. ick.. *face palm* While they aren't completely ruined .. they just are not something I am proud of. Oh well.. I will make a super awesome recipe later this week and hopefully have the right ingredients ;) I think I just need a glass of iced tea and a good book.
I did make a pretty awesome pizza on Friday.. Jon and I were talking about what would be good with BBQ Chicken because we had some leftover from Thursday.. so he suggested Mac and Cheese.. I came up with an excellent idea of making a BBQ mac and cheese pizza. It really would make any guy love you ;)
I mostly just invented it but I got a lot of requests for the recipe.. so Ill jot some stuff down.
You can either buy a premade crust or make your own dough.. ( i made my own )
Pizza Dough
2 1/2 c. flour
2 3/4 tsp. baking powder (if using baking soda use half and omit salt)
1 tsp. salt
1 tbsp. oil
3/4 to 1 c. water
Mix dry ingredients. add 3/4 cup water and oil. Stir until it forms a ball. If
dough is stiff, add more water.
The dough will be soft, not sticky. Knead on a floured surface for 3-4
minutes.
Bake at 400°F for 15-25 minutes.
Ingredients for the pizza
2-3 cups Mozzarella cheese
about a cup of barbeque sauce or any sauce for the pizza crust
1 pound Macaroni
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 pound any kind of cheese
2 tablespoons Parmesan
For the BBQ chicken I just used one of the Crockpot sauces ( apple Bourbon) and shredded the chicken.
I made the pizza dough and then spread some Barbecue sauce on the crust, then I sprinkled some Mozzarella cheese on it. I then spooned some of the chicken mixture over the cheese..
I then made the Macaroni and Cheese using this recipe
1. Boil the water, add the pasta and cool, stirring occasionally for 7-10 minutes. Pour the macaroni into a colander and drain.
2. Melt the butter in the same saucepan over medium heat. Add the flour and stir constantly until the mixture starts to bubble. Add 1/2 cup of the milk and stir until smooth. Add the remaining 1 1/2 cups of milk and cook stirring frequently for 10-15 minutes or until it boils.
3. Remove the pan from the heat,add the cheese and stir until the cheese is completely melted. Add the macaroni and stir gently until it is completely coated with the cheese.
4. Spoon the Mac and Cheese over the chicken mixture. ( if you are making this for a guy .. make sure to include lots of mac and cheese :P)
5.Place in the oven and bake it for 15-25 minutes
6.Take it out of the oven and marvel at how amazing it looks and then eat it!
Extra points if it gets someone to drool. :)

Kinda excited about dinner for tonight.. I am making Shrimp Stir Fry with Asparagus, pepper and onions. I found the recipe in the 21 day fix booklet.
and shrimps are just yummy and I've been craving seafood.. like some nice crab cakes mmmm.
And now because I needed it .. and because it made me giggle..

Sounds like a yummy pizza was made and had by all. :-) I'll just browse now, and read maybe three more. I'll try to catch up more and read future posts.
