Hey there Monday. I will own you :P

One thing I have learned this year and I guess its actually starting to make sense to me now is .. procrastinating is pointless. If you need to do something just get it done. You'll end up having to do it later, why not now? Another thing is don't fear Mondays. Get a jump on them and pound out your to do list. I used to let Mondays get the best of me and say "Oh I can always do that tomorrow. " Tomorrow isn't always promised, and you never know who wont be there. So in addition to getting shit done, tell people you love them and are thinking about them.

I've taken a short break from blogging but I am back.  Had a great Hanukkah and Christmas (because I'm strange and celebrate both of them) As promised I made Potato latkes and noodle kugel one of the nights of Hanukkah.  I was a latke beast and kept busting them out.  They were delicious, and turned out pretty great for not having a recipe.

Potato Latkes

5-7 Potatoes (depending on how many you want to make)
1 onion
Matzo meal or just crumbled up matzo
1 or 2 eggs
and oil
a pinch of salt and pepper

1. Wash the potatoes and peel the potatoes( this gets tiring so listen to some good beats;)
2. Grate potatoes using a cheese grater and place them in a bowl of cold water to stop them from getting brown.
3. When they are all grated drain them from the water and then roll them up in a kitchen towel and wring out the towel to push the water out, then put all the grated potatoes in a bowl
4. Grate the onion and add that to the bowl with the grated potatoes.
5. Then stir in egg and salt and pepper
6. Heat 1/4 cup oil in a nonstick skillet over moderately high heat until hot but not smoking, spoon 2 tablespoons potato mixture per latke, spread it into 2 inch round with a fork.
7. Reduce heat to moderate and cook until the undersides are brown (about 5 minutes)
8. Turn latkes over and cook until that side is brown ( 5 minutes) then transfer to a plate
9. Add more oil to the pan if needed.

And there you have it.. Potato Latkes

The noodle kugel turned out amazing. It was my first time making it also. I think Jon even liked it too ;)

Our Christmas was fun too, on Christmas eve we went to Jon's parents and we had Fondue. It was so tasty and obviously you cant go wrong with  fondue and wine.  :)

We slept over and the next morning we came downstairs and opened our stockings and then we got all showered and then we opened the presents under the tree. I was not expecting to get everything I got. Santa was sure good to me ;) Books and a Fit bit and Chocolate and a hair dryer. Then a few hours later we went home and Jon and I opened our presents to each other.  Jon got me Cards against Humanity ( its the best game ever, if you haven't played it you are missing out) and some Baileys Vanilla Cinnamon.

All in all it was a good Christmas, I got to spend it with people I love, I wish I could have spent it with my parents but hopefully I will be able to next year.

Get your Monday stuff done, people : ) and remember to smile!
