Coffee.. some thoughts and my trip
Welcome back you guys. I've been MIA for a while.. Wisdom teeth surgery and then developing dry socket( which really hurts FYI) and then a trip to Schenectady to visit with my wonderful parents and friends.
It seems every time I go to New York I feel the memories flood back of growing up in my childhood bedroom and just how much my parents taught me about life. I think every time I'm there, my dad and I slip back into the teenager/father roles. Although he knows that I am 26 he feels that he wishes he could parent me forever :P ha ha.. I'm sure thats not true. I'm sure I was a difficult child.
While it is still tough to go back and see how different my mom is after the stroke, I am glad I was able to spend 2 weeks with her. When I walked in the door from the airport she looked up at me and had the biggest smile on her face. She looked so excited! Even at 26 years old there really is nothing better than spending time with your mother. I wish I had done that more when I was younger.
I had a busy two weeks. Helping around the house and seeing various friends and of course driving in snow and shoveling snow and cross country skiing and visiting family in Connecticut. But being traveling did make me a little restless.. I wanted to bake.. Luckily I have a friend that wanted his apartment to smell like fresh baked sugar cookies. :) So cue up the scrambling around trying to find ingredients at my parents house.. sugar cookies with Quinoa flour? ...er no thanks.
Just to let you know.. mixing the cookie dough with a mixer with one speed.. FAST is pretty hard if you don't want to completely screw up a kitchen and get a sugar facial at the same time. ha ha. good times.
The cookies turned out delicious and I got text messages the following days telling me how delicious the cookies were! ha ha..
On one of the days my dad and I went cross country skiing. We both figured it would be an easy ski, so we get there and it was supposed to be 25 degrees but It didn't feel anything over 10.. brr and it was windy. The conditions were not great.. icy..and the track was basically nonexistent. So that resulted in my skis slipping and me falling quite a bit hah. The hardest part about falling was that the snow was so deep that I couldn't put my arms down to help me up. because then I'd be up to my elbows in snow. At one point my knee banged into my ski. After getting home, I realized I now had a huge bruise on my knee and a few other bruises on my leg too.. fun..
While I was in New York I went to one of my favorite restaurant's and had lunch. My friend and I then decided to get bread pudding... it was seriously one of the best things ever,, I think I might have the recipe for it... hmm... *strokes chin*
I also made really delicious Chili and my friend made AMAZING Tiramisu. mmm
