Perfect day for Rainy Day Baking
So as I write this, where I live in Texas is under a flash flood warning and a tornado warning.. It hasn't rained too much yet, it will get worse over night. Since I knew It was going to rain for a few days I decided to get all my errands done on Monday. ( Woo I finally found Bridesmaid shoes for a wedding I'm going to be in) It was actually pretty fun to go shopping by myself, even-though it is much better shopping with a friend.
I take rainy days seriously and go all out for them.. Curling up with a good book, sometimes watch some Netflix and the number one thing I like doing on rainy days is baking. I found a cookie recipe last week and I knew I needed to try it. Chocolate Chunks + Sprinkles + Sea Salt = Amazing
I love all those things desperately so why not put them all together.. and you cant go wrong with Sprinkles.. It's like a party in a cookie.. and who doesnt like a party?

In Addition to the Cookies, I made myself a pretty good lunch. I made Harvest Apple Salad. It was super yummy, You should make it.
Harvest Apple Salad
Here are the ingredients.
1/3 cup Apple Juice ( I used Simply Apple juice kind )
2 Tablespoons Apple Cider Vinegar
1 Teaspoon Honey
A pinch of salt
A pinch of Pepper
1 Tablespoon of olive oil
6 cups of any kind of lettuce( I used Spring Mix)
1 Medium Granny Smith Apple, cut into Matchstick pieces
2 oz crumbled Goat Cheese ( I used the Cranberry Cinnamon kind and it made it taste so good)
Directions
1.In a mixing bowl, stir the apple juice, vinegar, honey, salt and pepper until well combined. Add the oil and stir in.
2. To build the salads, place 1 1/2 cups of lettuce on each plate and top with 1/4 of the apple slices. Sprinkle 1/2 an oz of goat cheese over the top. Make sure to shake the dressing again before adding it combine ingredients again. Drizzle two tablespoons of the dressing over each salad.

Tonight on the Menu is Beef and Barley Soup in the Crockpot. It sounded like the perfect thing to make for today so lets hope it is tasty. I decided to get a loaf of bread to accompany it. mmm!
I remember when I was growing up, a few times my friends mother made Beef and Barley soup when I was over at their house and it was the best thing I had ever tasted. I cant explain why it was so good.
Tonight the plan is to eat dinner and then at 8 I am having a Wine and Skype night with one of my friends.. ahh the little things in life.. Wine makes everything better.. doesnt it?
ahhh! I totally forgot to write about my trip to NY. My friend and I went to get sushi and Mojtos at Zen and it was delicious.. It was exactly what she needed to get through crazy drama. We also decided to order dessert and it was way too amazing hah.. yumm Fried Cheesecake...
