I've been going through a bunch of recipe books and picking and choosing recipes to make. It will be a recipe extravaganza :)


I made some chocolate chip cookies recently, I used Mark Bittman's recipe and I'm pretty sure it will become my go to chocolate chip cookie recipe.. I also made some Butterscotch Brownies because one of my friends kept talking about them. They sounded really good and I wanted to see if they could really be that good without having chocolate? ... crazy thought,.. and very hard to believe... but they were.. they were melt in your mouth tastylicious.
I will for sure make them again ... if I am not craving chocolate.. but really If I ever am ... please call someone, that is not normal. I love chocolate. 




Another thing I made recently was Snickerdoodles (my husbands favorite cookie) I found a recipe for them on the back of a piece of cardboard that was from a baking pan.  The recipe stuffs them with Rolos but I like making them the regular way too.  The last time I made them with the Rolo's, they got stuck to the bottom of the baking sheet. ooopsie?  I cant decide between Snickerdoodles or Chocolate chip cookies, I think I like them both equally. Making Snickerdoodles is such a fun process, creaming the butter and sugar, rolling them in the cinnamon sugar mixture.. and they turn into perfect cookies.

On Friday it was Cinco de Mayo and on the menu was Margarita Grilled chicken with rice and obviously Margaritas.  Earlier Friday I went out to Target and bought a grill pan. We live in an apartment so technically they don't like actual grills but a bunch of people have them on their balconies. I got the cast iron grill pan from lodge and I am glad I went with that brand, the grill marks on the chicken turned out great. I will for sure fall in love with this grill pan. 


Margarita Grilled Chicken 

3-5 lbs chicken breast
zest of one lime 
juice of 3 limes 
juice of 1 orange 
1 jalapeno pepper (minced and take the seeds out if you want less heat
5 cloves garlic (minced) 
2 teaspoons ground cumin
1 teaspoon ground coriander seed
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 ounces tequila 
1/4 cup olive oil 

Place chicken in a resealable bag, set aside. Add all the other ingredients into a bowl, whisk to combine and pour over the chicken in the bag. Smush the marinade around in the bag and put in fridge for a bit to really meld the flavors. Take bag out and bring to room temperature and then place on grill and cook until you see amazing grill marks :P 
 It is so flavorful.  


I've been thinking of maybe doing a stream on twitch, I think I would start out playing some games, and if people wanted I might turn it into a cooking stream occasionally. Would you watch it if I did? 
It for sure would allow me to have a two monitor desk ;) but isn't that what everyone dreams about ?
