Reworking the post. lol I forgot to post last week
Living in Texas and finding fresh fruits and veggies has its issues, the closest "natural food store" isn't the easiest to get to, and yes theres farm stands and stuff but that is about 40 minutes away. Which leaves me the food I can find at the grocery store, which is great and all.. but where does a girl have to go to find some rhubarb???
I saw a recipe for strawberry rhubarb almond picnic bars and they sound scrumptious. I love the sweet and tangy flavors of strawberry and rhubarb together, and almond too.. you gotta be kidding... One of my all time favorites
As soon as I can acquire the supreme deliciousness that is rhubarb, I will make these
I made one of my favorite cookies last week. I hadn't made them in a while, and I figured my life was missing some Chocolate Chunk Sprinkle Cookies with a few sprinkles of sea salt. mmm! Sea salt brings out the flavors..

I finally found rhubarb at Kroger, I was getting some celery and I looked down and there it was right in front of me. I hadn't seen it before that so it was pretty funny I found it. I made the strawberry rhubarb bars last week and brought a few of them over to Jon's parents, I'd say they turned out pretty good. I cant figure out what my favorite part of them was, The strawberries were sweet and the rhubarb was sweet with a bit of sour but not too much. The filling was frangipane otherwise known as almond cream. It was my first time making frangipane and it was mouthwateringly good. I forgot to take a picture of the finished product because I baked it at maybe 9:30 pm, still wasn't the latest I stayed awake baking.. um.. I think the latest was before Liz's bridal shower and Liz F and I stayed up baking till 3 am. It was tiring but super fun.

The recipe I found had the rhubarb arranged in a Chevron pattern but that wasn't working out so I decided to lay out the strawberries then made a few lines of rhubarb.

We got a bit of a late start camping so that kind of threw us off, but we did get to to some late night cooking.. (that was an experience) Imagine it being so hot and buggy at night that bugs basically dive bomb your mouth. We needed light to cook, but if you had a flashlight they bugs would be all around you. Finally we finished dinner, then we headed to the tents to sleep. or just toss and turn because it was super hot. Texas camping is no joke ya'll.
We had a tent fan and even with that it was like a sauna. We woke up the next morning and since it was supposed to be even hotter that day and it was already hot that early in the morning we decided to call it a short trip and go home that day instead of Sunday. We packed up camp and went home, since our friends live in our apartment complex we decided to head over to their place for dinner and use up the rest of our camping food.
This week I want to make Strawberry shortcake for Friday, and Jon had been saying he wants blueberry muffins so I will most likely make those.. but If I make blueberry muffins I'll want to make strawberry muffins.. Classic if you give a mouse a cookie situation.. am I right?
Just went out to check my balcony garden and I planted some bell pepper seeds just to see if they would sprout while I germinated other seeds inside, the seeds sprouted! Yay! So far I have green onions and parsley and am regrowing some celery on the kitchen counter. Man, I love gardening.
