Cherry time :P

I've been busy lately, but not to busy to cook. Earlier this month Jon and I went to Austin for a few days for RTX, which is a really fun convention. We had some pretty good hispter tacos there and got to meet some people from Rooster Teeth. (yay) 

The last time I was at the grocery store I heard a commercial over the grocery store radio about Pacific Northwest Cherries. I couldn't find them then but the commercial stuck in my head and I thought about all the possibilities of things that I could make with them. I went to the store again and went to the produce section and BAM there they were .. in front of me.  Yasss! 

When I got back home I had decided on a recipe.. Cherry Cheesecake Brownie Bites. It seemed the perfect mix of fruit filled and creamy goodness. I started out the recipe by making the graham cracker crust..then making the brownie batter, the thing that took the longest was pitting the cherries.  Most likely because I don't have an actual cherry pitter, so I used a straw to stab the cherry to get the pit out. ( I should really buy one) But hey who doesn't enjoy their hands so cherry juice covered that they look like they murdered someone ? Extra Points for practicing your evil laugh..

I'm really glad no one came to the door while I was pitting the cherries, it was quite messy. The recipe calls for either cherry pie filling or making your own, which I did.  The end result actually is quite delicious. Sweet but not overly so, still able to taste the tartness of the cherries. The recipe calls for a mini muffin tin but I had some batter left over so filled some of the regular muffin tin, and honestly I think those turned out better than the mini ones. Some of the mini ones stuck to the muffin liners. boo.. but it worked out in the end.

 I have some of the cherry pie filling left over and I think I want to make a cherry galette using my favorite pie crust recipe using ground oats.  It's actually pretty tasty, I discovered it when I made a caramel apple pie. Later this week or this weekend I think I am going to make almond flour chocolate chip cookies.  I'm also going to make Zucchini noodles for dinner, well I'm making Thai Basil Beef with rice for Jon but  on top of Zucchini noodles for me. Veggie noodles are really tasty, but maybe I'm not the best person to ask I really like vegetables.


So our cat Charlie is a big dork and likes to chill like this.. looks comfy? 



This week is going by so quickly, its almost Friday. woo weekend 
Anyone got any fun weekend plans? This weekend I have to go buy some dirt for my balcony garden and try to find a decent looking basil plant and maybe get new windshield wipers or maybe wash my car if it isn't too hot.. but its Texas.. so it will most likely be too hot :P
