Happy September :)

I am super excited because we had a few days last week that actually felt like fall, which in Texas is pretty neat. Don't worry the humidity is still here which makes it quite muggy but not as hot as the middle of summer.. Small steps people.

The stores around here already have fall items out and Halloween candy, at least it isn't Christmas items.. yet.

Last week I finally made Jon the Blueberry muffins he has been asking for, I bought the blueberries before but then we went out of town so this time I finally had time to bake them for breakfast..
We looked up the best recipe and found "to die for' blueberry muffins.

They were exactly what I was imagining.. the perfect amount of blueberries, a wonderful crunchy cinnamon sugar topping.

This recipe is totally going in my recipe binder!


To Die for Blueberry Muffins 

1 1/2 cup flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup blueberries

topping
1/2 cup sugar
1/3 cup flour
1/4 cup butter, cubed
1 1/2 tsp cinnamon

Directions:

1. Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners.

2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt, baking powder. Place vegetable oil in a 1 cup measuring cup; add the egg and enough milk to fill the cup. ( this is a really cool step) Mix this into the flour mixture. Fold in blueberries. Fill muffin cups to top and then sprinkle with topping.

3. To make topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 1/3 tsp cinnamon. Mix with fork and sprinkle over muffins.

4. Bake for 20-25 minutes in the oven until done.

I have a busy week this week, lots of errands to run but since its the start of fall baking I have two different apple recipes to make. One is purely chance, Jon gets Subaru magazine and they had a article on apples & cider making and they included a recipe for Apple Slice Bars. The other recipe I found in the Taste of Home Fall Baking magazine, that recipe is for Glazed Apple Maple Blondies.    ( * drool * )

I woke up early today and did some yoga then made myself some coffee and ever since then I've been having a good day. I went grocery shopping at 9ish and in a bit I am going to clean the kitchen a little. Hope whoever is reading this is having a good day, and if not I hope your day gets better.
