First Post

Hello Everyone, I decided to start a blog to journal my experiences with cooking, and write down my favorite recipes.This blog will be a fusion between comfort food/slightly healthier food and baking.

From as long ago as I can remember I was helping my mom in the Kitchen.  I remember standing on a chair (because I wasn't tall enough to reach the sink) and helping her wash the vegetables, or helping her roll out cookie dough.  My mom has taught me a lot about cooking, and how to make things healthier.  She always wanted our family to eat healthy, and not eat a lot of the "bad fat".  So of course that means every time we went to the store was an experience.  While all the other kids mothers were buying them Kool-aid and Pop Tarts, my mom was buying Whole Wheat Bread and more vegetables then a farmers market.  Once I got older I found it getting more difficult to keep up with eating healthy.  Everything just looks so good. I still eat a lot of fruit and veggies, and don't have too much chocolate. 
 One of my favorite recipes as a kid was Spinach triangles or Spanakopita.  I have always loved spinach( I was a weird kid) I think this recipe bridges the taste of spinach and feta cheese perfectly.  Even people who don't like spinach love these triangles.  My mom and I always made these for parties and froze some for weekday dinners.  My next post will have the recipe.  

Recently I moved out of my parents house and moved in with my boyfriend Jon in Texas.  I've learned its much harder to figure out dinners when you have to cook for two people, especially when one works the night shift.  Since We've been living on our own, I've decided to learn a little more about cooking and to expand my horizons and experiment in the kitchen. The only thing holding me back from going completely "kitchen crazy" is that I have to deal with limited kitchen space.  We have very little counter space, and it is quite cramped if two people are cooking.  Hopefully our next apartment will have a lot more counter space and hopefully more storage space, because my dream is to own one of these.. 


A girl can dream, cant she?
