Heat Wave!
Texas in the summer time is way hot. It's been almost a year since I moved here from New York, I'm pretty much used to the fact that from 11-5 if you go outside It will be like a Sauna. Even just getting in your car.. you could probably fry an egg on your dashboard. Crazy.
Well as of this week the temperature has hit over 100, which makes it hard to think about turning on the oven and heating the apartment up further.
but alas.. I will do it, because it feels like a Calzone night.
On the way to the store my car said it was 102. yikes
Today for lunch I wanted something different and something healthy. So I made a Ham and Cheese roll up in a tortilla with Hummus and Banana peppers and spinach. Its sounds odd but it hit the spot.. I am definitely making that again.
So Funny story about the Banana Peppers.. I really wanted something with a little zing to it, so I bought the peppers. I was really excited about them. When I went to open the jar.. It would not open.. I tried and tried and then eventually asked Jon to helped. He grabbed it and tried. the top wouldn't even move a little. We tried using a rubber coated pot holder and it still wasn't open.. I knew I wasn't going to give up because I REALLY wanted the peppers. Finally it twisted off. Woo Go Rachie!
One thing I learned today is don't bring Jon to the store because when you go to check out you will have Milk Duds and Squeezable apple sauce and Super Mario Fruit snacks in the cart.. Sneaky Boy.. Well I guess I should keep him around since he organizes the cabinets so everything fits. :)
All you really need for Calzones are whatever ingredients you want, since I've made them before I decided to try a different combination of ingredients. Pepperoni and olives and Spinach and Cheese. Jon will probably just have Pepperoni and Cheese

My Friend Liz sent me a recipe that I really want to try.. English Hobnobish Oat Cookie Biscuits. These would be delectable with a cup of tea. I'm sure that If I make these it will make me want to go to England again.. but I will take that chance, they look good. I would make these for a tea party but I'm sure that Jon would not like to have one. I'll make these after we move into the new apartment.
