Its another day and another recipe.
My mind is in more of a brr its cold mentality.. there's a little bit of a cold snap in Texas, which I am loving. I love hoodie weather. It gets me all excited for cookies and egg nog and warm breakfasts. The topic of today's post and the focus of my heart right now is .... Caramel Apple bread pudding with a Whiskey Caramel sauce.. mmm ..
I made this over the weekend and it was the most perfect breakfast. It was even better with a big cup of coffee made in our new coffee maker. A pot of coffee is always better than a cup of coffee right?

I think the Apple bread pudding turned out so good that it might have to wind up being Christmas breakfast. I feel like that can be arranged.
I found this recipe from another blog called Flour Me With Love, its such a cute site. Without further ado... here is the scrumptious recipe.. If you are all smart.. you should make this for someone you love.. or I guess for someone you can somewhat stand ;) but be prepared for what happens after. They might start to love you :P
Caramel Apple Bread Pudding
10 slices of bread ( I just used about a half a loaf of challah)
1 1/2 cups half and half
1/2 cup brown sugar
3 eggs
1 tsp vanilla
1/2 tsp nutmeg
2 small apples
cinnamon
sugar
Caramel:
1/2 cup brown sugar
1/4 cup butter
1 tbsp syrup
1/8 tsp salt
1 tsp vanilla
1/4 tsp baking soda
little bit of Maple Crown or whatever alcohol you want
Okay pay Attention... Directions time :P
Preheat oven to 350 degrees; grease a 9x9 baking dish.
Whisk together half and half, brown sugar, eggs, vanilla and nutmeg in a bowl, set aside.
Break up 10 slices of bread into small pieces. ( and try not to nibble on it )
Pour the liquid over the bread pieces and mix until combined; set aside.
Dice the apples and sprinkle cinnamon sugar over them.
Combine bread mixture and apples together; place into baking dish and even out.
Place in oven and bake for 50-55 minutes or until your apartment smells way too damn good, approximately when the center springs back when poked with a toothpick. Let cool
Mix the brown sugar, butter, syrup, salt and vanilla; boil for three minutes. Remove from heat and add the baking soda. Place back on the stove for another minute to thicken up. Allow cool for five minutes. Slice a piece of that bad boy and slowly drizzle that amazingness all over that sucker.. without making any sounds of pleasure ;) oh wait .. thats just me who does that?
In other news, our cat ha finally learned how to cuddle with me. (woohoo) For the longest time he would hide and not really sit near us. I guess that changed. Hes been curling up on my lap, maybe its cause hes been a little sick but I'm hoping its cause he finally got used to it. Silly cat.
