Wish Fulfilled!



One of the best things I've made so far is the Thin Mint Truffles. When Jon and I were at his sisters house for Christmas she made reallly amazing Truffles so I decided to try to make a different version of truffle, and of course why not use thin Mints.   It was the easiest recipe EVER.  Only problem is that it is quite messy.
All you have to do is crush up the Thin Mints( Luckily I remembered that I could use my Magic Bullet for that) and mix that with cream cheese, and mix it up goood. I used two different bowls because I used two different colors of chocolate.  The recipe called for Green Mint Chips but I couldn't find any so I bought another bag of white chocolate and green food coloring.  It worked perfectly. The messiest part of the recipe is rolling the truffles in the chocolate, anyway I tried it, the chocolate still got everywhere.  I've never made any type of candy or truffle before so It was really fun to try my hand at.  After they are all covered in chocolate I put them in the fridge for a while to chill.  Then I put the rest of the melted chocolate in a plastic bag and snipped off the end and drizzled the chocolate over the top of the truffles.  Once that is done put the truffles back in the fridge and let them harden for a while.. Go do something while you wait,so you aren't tempted to try one yet.

Truffles are a quick and easy recipe to make if you want to bring a dessert or something to a party.
and they are delicious.  Just try not to have too many of them ;)

I'm writing this while watching the movie The Help.  I love that movie, It is an excellent movie and I think everyone should watch it. (yes, even you Jon) One day I will make him watch it.  Maybe I'll make him a really yummy dinner and he will love it so much that he wont even realize what movie we are watching ... ehh hopefully.


In other news.. My dream came true!! I got a Kitchenaid Stand Mixer!  My aunt read my post about wanting one and she heard that QVC had a really good deal on mixers, so she told my mom.  just wish I had a better place to store it rather then under our table.  (Thank you Aunt Candy xoxo) I have such a wonderful family! I can't wait to whip up something amazing with it.  Maybe, I'll make Jonathan's birthday cake with it.  He's gonna be a birthday boy on the 16th :)
I'm one happy Girl!

Next week Is going to be Jon's spring break, so we are actually going to be able to spend time together yay!
I think we are going to try to go to the Zoo, and on the 15th we are going to the Rodeo.
