The Grand Cupcake Adventure!

This next week is going to be really busy.  On the 7th we went to the Rodeo and saw Blake Shelton perform.  It was a perfect night and was really fun. I saw so many different kinds of food... Some stand out items were Deep fried Kool Aid, and deep fried cheesecake.  REALLY? Finding something to eat at the rodeo is definitely a lot harder if you are on a diet.  Thankfully Jonathan's mother and I split a burrito.   Jon and I are going to the Rodeo again so I'm sure we will end up having some different Rodeo food next time.  I love the whole atmosphere at the Rodeo, it just is fun and laid back.


Soooo  the part everyone has been waiting for.. the cupcakes part..(Yay Cupcakes)
My friend Liz wanted to make Truffula Tree cupcakes in honor of The Lorax, but she didn't have any kids to make them for so I told her that I would make them too and we could both blog about them.  :) She has a really good cooking blog also. Heres the recipe for the cupcakes.

The Cupcakes were really fun to make, and I got to use my grandmothers mixer. It makes a whole bunch of cupcakes though, we only have one cupcake tin that makes 12 cupcakes so I had to make a batch and then let them cool and then make more..
I let the  both batches of cupcakes cool before I frosted them, which gave me and Jon enough time to go out to dinner.  Then as soon as we got back I dove headfirst into frosting them.  We finally ended up buying powdered sugar and good because we needed it to make the frosting.  After you whip all the frosting stuff together you use food coloring to dye the frosting "grass colored".  It was pretty hard to get it a perfect "grass" color.  By the end of the food coloring I succeeded in dying a few spots on my fingers.   I think they are skin colored again by now.
Frosting the cupcakes was the best part, but I was hoping I could get Jon to help me, but nope. I had to embark on the Great Frosting Journey all by myself.  While I was frosting them Jon was like "ohhh they aren't green enough" ... Thanks for the help.  Apparently they turned out pretty good though, He did try one and it seemed like he liked it.  I didn't see him make any funny faces.  Overall I would give this recipe a B.  This would be a perfect recipe for Children.. ( Anna, Lets make these for Adam)

The only thing wrong with these cupcakes is that the cotton candy doesn't do so well overnight and disintegrates into nothingness.      Awesome..and also 24 cupcakes Is a whole lot of cupcakes.   So now I'm stuck with way too many cupcakes :)  I wonder if anyone in Huntsville would like a free cupcake.

So yay Jon is finally on Spring break.  We went to the Department of Public Safety to renew his license and for me to finally get a Texas license.  Then we went on a road trip to Buc-ee's.  It's like a gas station but with tons of other stuff. They had Burt's Bee's products and Beef Jerky and sunglasses and random Texas souvenirs.   We got shirts! I wanted to buy other stuff but I'm sure my parents would not have really liked a postcard with an Armadillo on it.

Tonight Jon and I are making Cajun Pasta again.  It really is delicious, everyone should try it :)  and tomorrow we are going to Jon's parents for a few days.
