Tweaking the Recipe :)
Wooo. I hit the 10th post mark!( Time to Celebrate) I made this blog for something to do, but I found out I really love blogging. Its so much easier cooking food rather than getting Fast Food or going out to dinner. I really like exploring what tastes good and experimenting with different flavors and bringing everyone who reads my blog along on the journey to flavor-town..
Last week we made Shepard's Pie and my mom really liked the recipe, and I forgot to post it., so here it is..
Ingredients
1 lb ground beef
1 pkg mixed veggies (peas,carrots)
2 cans cream of Mushroom soup
2 cups mashed potatoes
bread crumbs
Chili powder
cumin
salt
First things first
Brown the ground beef. drain off fat. Add Seasonings (to taste) Add vegetables to meat and cook until thawed.
Put the meat mixture in a casserole dish
Spread 1 can of soup over the mixture. Add the potatoes. Spread the 2nd can of soup over the potatoes. Sprinkle breadcrumbs on top.
and Bake for 30 mins at 350 or microwave for 7 minutes.
It was such a good recipe

Every time Jon and I figure out what to have for dinner Jon always suggests pasta.. His answer is either " I don't know " or "Pasta! "While Pasta is really delicious its not like I need to carb load, I'm not running a marathon anytime soon.. maybe in the future but ... that's another story..
So one night Jon won the decision on what to make.. I wanted to try something new so I consulted our Cookbook cabinet.( yes, we literally have a cabinet full of assorted cookbooks) Before I moved to Texas I acquired a book called Pasta Cooking , by Jeni Wright. It has tons of recipes (350 to be exact ). As I was looking through the book Fettuccine with Ham and Peas caught my attention. It looked really good, and Jon was also intrigued. We decided on it and we ran off to the store. I couldn't find any ham so I was trying to figure out what else would work.. I looked up and there was some Prosciutto. Perfect.. I thought.. Its a miracle.
Ingredients-
1/4 cup butter
1 small onion
1 3/4 cups fresh or frozen peas
*scant 1/2 cup chicken stock
1/2 teaspoon granulated sugar
2/3 cup dry white wine ( we left this out)
12 ounces fresh fettuccine
3 ounce piece cooked ham cut into chunks
1 1/3 cups freshly grated Parmesan cheese
salt and pepper
* When I was reading the directions I had no idea what a scant was, it means almost or a little less than. .. I guess cooking is teaching me new words too. ------------
Melt the butter in a medium skillet or saucepan, add the onion and cook over low heat for about 5 minutes until softened but not colored. Add the peas, Stock and Sugar, with salt and pepper to taste.
Bring to boil then lower the heat and simmer for 3-5 minutes or until the peas are tender. Add the wine, increase the heat and boil until the wine has reduced.
Cook the pasta according to the instructions on the package. When it is almost ready, add the ham to the sauce, with about a third of the grated Parmesan. Heat through, stirring then taste for seasoning.
Drain the pasta and turn it into a warmed large bowl. Pour the sauce over the pasta and toss well. Serve immediately, sprinkled with the remaining grated Parmesan.
This recipe was perfect. I bet it would be a very impressive recipe if you had company coming over.
