Time for Strawberry Muffins!
Any time someone in my family makes strawberry muffins, we know that it will be fun and they will turn out beautifully. My mother used to make them when we went to the Saratoga Race Track to watch the horses warm up in the morning. The strawberries compliment the sweetness of the batter and it goes together perfectly. The orange juice in them also adds a little sweetness. Eating these strawberry muffins convey happy thoughts and brings back memories of summers past.
Strawberry Muffins
3 cups flour
1 cup sugar
1 tsp Cinnamon
4 1/2 tsp baking powder
2 eggs
1 cup apple cider or orange juice
1/2 cup oil
2 cups cut up strawberries
Mix dry ingredients together. Add moist ingredients. Stir in Strawberries. Pour batter into 2 greased muffin tins and bake 374-400 for 20 minutes. Makes 24 Muffins
Pretty sure these muffins passed the Jon test, but I never know what he thinks, I usually just get a "this is good" or a shrug. I need a personal taste tester. : )
So the grand apartment search began yesterday. We saw two apartments yesterday and we are seeing two more today. I hope we find a good one
